There’s been an explosion of bean to bar chocolate makers in the UK, and around the world – in many ways mirroring the growth in coffee roasting companies around the world. Cocoa Runners have tasted thousands of the bars produced by those companies to select the best, and they got in touch to see if I’d like to curate a small selection.

The bars I chose showcase a question I find particularly fascinating – because it applies to coffee: How does terroir affect flavour, and how does the work of the maker (or roaster in our case) highlight or obscure those flavours?
